'Vada Pav, the most famous Mumbai roadside snack, consists of crispy batter-fried potato patty served between a pav has an inseparable relationship with Mumbai. VADA PAV Ingredients 5-6 large potatoes, boiled and peeled 8 pavs 1 cup gram flour (besan) ½ teaspoon turmeric powder Salt to taste 1 tablespoon oil + for deep-frying 1 teaspoon mustard seeds 6-7 curry leaves 1½ tablespoons ginger-garlic-green chilli-coriander paste 1 tablespoon chopped fresh coriander leaves Fried green chillies for serving Method 1. To prepare vada, mash the potatoes in a bowl. 2. Put gram flour in another bowl. Add ¼ teaspoon turmeric powder and mix. Add some water and whisk well to make a semi-thick batter. Add salt and whisk well. 3. Heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and let it splutter. Add curry leaves and let it crackle. 4. Add remaining turmeric powder and ginger-garlic-green chilli-coriander paste and sauté for 1 minute. 5. Add mashed potatoes, mix and cook for 1-2 minutes. Add salt and coriander leaves and mix well. Transfer in the same bowl and cool. 6. Heat sufficient oil in a kadai. 7. Divide the potato mixture into equal portions, shape into balls and lightly flatten between your palms. 8. Dip each vada in the batter, put in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 9. Serve hot with pav and fried green chillies.
